Learning how to drink and make good tea can be the skill that will take you places.

If you’re not a lover of tea, you have to fall in love today I’m begging you. 
Tea is a universal language that most parts of the world speak, Europe, Asia, Africa, and the whole world.

Now I know in Ghana, what we refer to as tea can be quite different from what the rest of the world know as tea. 

I’m not talking about the beverages we call tea, it’s high time we stopped calling them that, because tea comes from a plant called Camellia Sinensis.

All tea comes from this plant. Flavors are then infused with the plant to create tea like strawberry, vanilla, blackberry, camomile tea, and the likes. 

So, this is the universal tea language, but do you speak it? 

It’s a language spoken in business meetings, when meeting important people, breakfast meetings, at the Queen’s house or perhaps an Asian War Lord or even just in a social gathering. 

Even in the business world, I’ve realized you may not just need to know how to use computers, type letters, relate with people, you may need to know how to drink tea with the boss, or a potential client who likes tea. 

I’ve had to make tea for old time professors at work, just imagine if I didn’t know how to. 

I’ve been chosen to keep a job, just because there was no one else to make tea. 

You might be in the presence of important people, and they’ll be watching your tea Etiquette, let’s hope you read this article before that time so you can impress them. 

So, I’m sharing how to make world class tea that will give you an edge anywhere you go in the world. 

1) Boil some water, let it come to a boil, tea shouldn’t be made with warm water or even worse microwaved water. 

2) If you’re using tea bags, put your tea bag in your hot water, you can use a tea pot or just a tea cup. One tea bag is enough for one person, two for two persons and so on. 

3) Depending on how you like your tea, if you like it light, 2 minutes is okay for it to brew, but if you like it strong, 5 minutes will do. 

4) Usually tea is not taken with milk, as the milk overpowers the flavor of the tea. So you find in some parts of the world, they don’t use milk. 

But a little milk is allowed, just a little, because you don’t want to overwhlem that flavor. 

5) If you like using sugar that’s fine, but if you are a no sugar fanatic, you can take your tea with chocolate, sweet cookies, or cake. It’s amazing I tell you, I prefer mine this way. 

6) If you’re into flavors like I am, you can add honey, mint, lemon juice and fruits to your tea to give it fragrance, and a really delicious taste. 

7) Tea is usually served with sandwiches, cakes, pastries, and biscuits. 

Master this, and you will be able to dine with any great tea lover all over the world. 

Seriously, it really helps to know these things, and be open to them. 

Stop limiting yourself to what you know, and stop thinking, this is for foreigners, what’s the point of living, if you cannot adapt to change, or adapt other people’s good culture. 

In a world where competition is getting tougher, I think you should leave your I’m a traditionalist feelings behind, and open your mind and be global. 

But then again, you don’t have to take my word.

Top 5 movies that will make you cry. 

I’m such an emotional person, you need to be one if you are an artist.  
It’s this thing about reaching deep into your soul, digging into buried emotions, and making meaning of them. Sometimes you don’t, but you still need to express them. 

As a writer, the things that inspire me, sometimes(more like always) make me cry, music is number one of course, and looking at the sky at night helps too.  

A quiet place, silence, beautiful work of art, and lately movies. 

I tell you, I respect people who make movies, the actors, the writers, directors, producers, especially the ones that create movies that are real, the ones we live everyday. 

I’m sharing my top five movies that inspires me to write, it can inspire you too, and they definitely teared me up.

These were epic, beautifully told, beautifully played, and if it doesn’t make you cry like I did, then it must be something wrong with your eyes not your soul.

I tried this Chicken Fajita Salad from Buzzfeed Tasty, and mmmmm, no more words, let’s cook. 

I saw this recipe and I immediately knew I wanted to try it. It’s chicken fajita salad people!!

Ghana is most famous for that loaded, cabbage, or lettuce, baked beans, egg, pasta, tuna salad, coated with lots of mayo salad, It’s yummy, yes, but thinking of that mixture right now makes my tummy ache, all that calories, mmm. 

I love salads, you basically toss a bunch of things together and it’s a salad.

Even better when you throw in some meat because I love meat. 

So here’s what I learnt from tasty, with a little spin of my own because I am like that. 

Prep time: 10 mins

Cook time: 20 to 30 mins

Here’s what you will need. 

1. 1 Chicken breast (or two if you like meat like me) 

2. 2 large Bell peppers 

3. Lettuce 

4. I Cucumber 

5. 1 Onion

6. 1 Avocado 

7. Salt and Black pepper. 

8. 1 Sausage (optional) 

9. Salad dressing (4 tablespoons of olive oil, 1 Lime, 1 tablespoon of brown sugar, salt and black pepper) 

What to do. 

1. First, make sure your vegetables are washed and dried. So you might want to do this way before you start so they dry out well. There’s something awful about wet vegetables in a salad. 

2. Slice Bell Peppers and Onions into semi thick long slices. 

3. Put your non stick frying pan on fire and put your chicken breast and bell peppers and opinions in it. Season both well salt and black pepper and any other seasoning you might like. I added some curry, but really just salt and pepper is fine. 

4. Let it cook properly, keep stirring the peppers and onions till onions are translucent, and peppers are cooked. 
5. Remove peppers and keep cooking that chicken, let it cook well especially if your chicken breast is a bit thick. If you think it’s not cooked through, you can cut it open, it will cook fine. 

6. Once your chicken is cooked through, remove from fire. 

Mmmm, look at that juicy and most chicken.

7. If you’re using sausage like I did, you will want to fry it too. 

8. Time to make this salad.Cut your lettuce, Cucumber and Avocado and just stack them, lettuce first, then cucumbers, then chicken, sausage, peppers, and avocado.

9. To make your own dressing, add all the ingredients and whisk it well. I love making my own dressing, it’s super easy. 

10. Drizzle that delicious dressing over your salad and toss it around, make sure everyone gets a good coat of the dressing. 

Viola!!! It’s ready to be loved by you, your mouth is going to love it. 

It’s easy, and you can eat it just as it is or with a toast or just throw it in a bun like I did. 

You’re gonna love yourself more for this. It’s good for breakfast, lunch, dinner. Hope you try it soon.

Meanwhile, as people are waiting to get the new IPhone 7 (which is gorgeous btw) I’m enjoying my INFINIX HOT 3

The IPhone 7 is out, yayy!! It’s beautiful, It’s bold and it’s in my favorite color black. And it comes with the usual social pressure. I’ve observed that in the world, there will always be some sort of social pressure and there are four kinds of people who respond to it.
One, the people who can afford to get the latest phone no matter if their current phone is still okay.

Two, the people who hustle for the Iphone 7 even though they can’t afford it.

Three, the people who wouldn’t mind having the IPhone 7, but can’t buy it because of obvious reasons. So they stick to their old phones, like me (no pressure)

And lastly, the people who don’t give a damn about what kind of phone they use, they just don’t care about chasing new things.

This is not a review of the phone, what new changes they’ve made is not really my cup of tea, but I hear there is no much change but a few irrelevant add ons, but that’s for you guys to decide.

I’m not sure what group you fall in, but I am one of those people who can’t afford to buy an IPhone 7 yet. LOL!  But that’s cool really, and it should be for you too if we are group mates.

What’s that proverb that was passed down to us again?

Cut your coat according to your MATERIAL, not your SIZE. Yes! We all have big sizes, big dreams, and we want to use the best things like an IPhone 7, but then again that’s debatable.

If you can afford it, or someone can afford it for you, why not? Sure, indulge yourself. And by afford I mean you can pay for it without stretching your neck or sweating in your pants. But if you’re like me and you can’t, and this is my opinion which you know is true, don’t make it your ultimate goal to get it or die trying. You just might die trying, and it may not be a physical death but your finances might die, or your own soul because you’re more concerned about the pride of life.

Your ultimate goal should be to make it to heaven, haha! You know, the noble things, to finish school, start a business, work more for God, be a better person.

I too like good things you know, but sometimes just chill, some things will come to you in good time, especially when you don’t chase them.

Some weeks ago, my Daddy said our lives are better than the lives they lived. In their time, they used to drink Coke only at Christmas or really special occasions. Ha! Can you imagine it? What about chicken? Chickens had no reason to fear death until it was Christmas. But now look at us, Coke is three cedis, fifty pesewas away, chicken is on everyone’s plate now, I’m even tired of the taste.

So, one day, what you can’t get now will be like Coke for you. You get what I mean.

There’s no rush really. Honey  it’s not a fight, or a competition, don’t let society make you believe  that. In the meantime, while you are waiting for IPhones to be Coke, here’s a great phone you can use that’s in town.

It’s the INFINIX PHONE!! HA! I use an infinix and yes it’s an android phone, my social life is still good, and people can bury themselves with their android vrs IPhone wars. It’s been a really good ride with infinix, it does what I need it to do, with a surprisingly good camera for everytime I want to play Street Photographer, and battery life is bae. It’s really affordable too. Seriously I felt I cheated the company buying it at such a low price.

Now, I’m not trying to sell my phone to you, I’m just saying, it’s okay to use what you have and be proud of it and be content. Life is still beautiful, the clouds won’t turn black if you can’t get an IPhone now, birds will still sing, Twitter won’t go anywhere, it doesn’t make any difference really.

So be free from social pressure in Jesus name.. Amen!!! 🙂

How Shoalin Soccer made my day. 

Lol! The title is a bit dramatic today, I mean the day is still young and the memories are slowly losing its effect, but anyway I hope it catches your attention, well I guess if you’re here, it did.  

I’m not the kind of person who blogs about everything I see and experience, somethings are just for your eyes or maybe it’s not really going to benefit anyone. But I had to share this one. 

I got on a bus this morning and after I sat down, I looked up and there on the TV screen was a movie I watched when I was little. It was Shoalin Soccer!!

You know that movie, with it’s exaggerated special effects and impossible action, it was just what I needed to start the day. 

Why? Because it made remember the time, you know the good times, when we were young and innocent and free and we didn’t have so many troubles. It also made me remember the people I watched the movie with. 

I had a good laugh on that bus, and so did many people too. 

Even though we know the movie is too dramatic, we don’t care, it’s still a good movie and it still made us laugh after all these years. 

Hmmm, that tells me that I am not dead and overwhelmed by the issues that come everyday. I’m still a child who can laugh at a silly movie and it doesn’t take the world to make me happy, to start my day with a smile. 

If you haven’t watched that movie, you should, lol! 

I think the epic part is when the good guys shoot that epic ball, that carries the wind and the earth with it, clearing everything in its way, and finally reaching the goal post and because the wind is so strong, it blows away the goal keepers clothes, leaving him buck naked and flying off into the sky along with everything else. 

It’s a silly movie, but it may be what you need to start a great day or end it.

My First Recipe On The Blog

If you know me, you’ll know it’s no secret I love food. I love making it, eating it, and especially critiquing it. I’m so fussy about what goes in my mouth, I’d rather skip a meal than eat bad food, although bad tasting food is rather relative.

I definitely wanna share food I like, I’m not a chef (I wish I was) but I’m a fast learner and food loves me as I love it , so it works.

Today I wanna share a one pot recipe I learnt from one of my favorite cooks Laura Vitale. It’s a bit different from hers, because one, I couldn’t get all the ingredients so I had to improvise. If you love cooking like me, you’ll hate living in Ghana for one valid reason, cheese is super expensive because we are too smart to make it ourselves and yeah when you go to your local market, it’s hard to find basil, or say pine nuts, at least you can get mint, parsley, and spinach at Madina or Agbobloshie.

Laura’s recipe required basil, pine nuts, cheese for pesto which I didn’t have so I had to skip that. The whole idea is to use ingredients you have on hand.

So here’s what I used for this easy recipe.

Prep time: 10 mins

Cook time: 15 to 20 mins

Ingredeints

1 lb of spaghetti

1 large Onion, sliced into big chunks

3 large cooked sausage ( I fried mine a little)

1 cup of Tomato Puree ( If you can’t get that, just use two large fresh tomatoes, blend it and parboiled it, till the water is dried )

Some cherry tomatoes (optional)

3 Cups of water

1 large Bell pepper ( or green pepper)

3 Cloves of Garlic crushed or minced

Fresh parsley/ bay Leaves

Salt and Black pepper to taste

What to do

So there’s a reason it’s called a one pot spaghetti, you toss everything in a big pot and let it cook, but you must do it well, otherwise it will go wrong.

  1. Take a large heavy bottomed pot, add the water, tomato puree, onions, garlic, cherry tomatoes, bay leaves, fresh parsely and stir. Then add the spaghetti, don’t break it please. Put your burner on medium high heat.
  2. As the sauce boils, the spaghetti will welt into the sauce, stir it and allow to cook for 10 to 15 mins, depending on how long it takes your spaghetti to cook. My spaghetti was thicker so it took about 20 minutes to cook. Go for thin ones if you don’t like thick spaghetti.
  3. Make sure you season your spaghetti well, with salt and black pepper and stir every couple of minutes so the spaghetti doesn’t stick together.
  4. You want to make sure your sauce doesn’t dry out, so if it does, add a little water and season again. The spaghetti should not be dry but moist with that sauce, so watch it.
  5. When it’s cooked, you can add Parmesan cheese if you have that, I didn’t so I skipped it. Serve right away with some fresh parsley sprinkled on it

That’s all! Really, this recipe is perfect for those times you just want to make something quick and easy, or when an unexpected hungry guest surprises you.

I highly recommend this recipe, It’s super easy to make, delicious and just a handful of ingredients to work with.

But this is not a rigid recipe, you can add your own spin to it and substitute ingredients, be creative.

Cafés is the new black.

I’ve never really enjoyed being formal, going to formal places, talking in formal language, wearing formal clothes, it’s this thing about me not liking being rigid and stiff, it’s just not me. But of course not everything should be care free with no restrictions or rules.

I too should be able to do formal and be comfortable in it, but when it’s time to loosen that tie, to wear my hair down, I’m glad there are places I can go to be just that, free.

It’s no place new, but experiencing them has been new for me, it’s the trend in Gh now, it’s Cafés in town.

They are not like your regular restaurants, it’s primarily a coffeehouse or a coffee shop.

Café Mondo A&C East, Legon

It may have similarities with restaurants but trust me, you may love this one more.
With it’s usual rustic theme and casual atmosphere, this is a place you can hang out with friends and not be afraid to laugh out loud.

Food is usually light, pastries, sandwiches, breakfast recipes and coffee, smoothies and juice to wash it all down.

So what makes a good Cafe?

What will make you choose a Café over a restaurant or a fast food joint.

First of all, it’s got a really good comfortable atmosphere.

Freelancers always find this a very useful place to work. You’ll find many with their laptops plugged in.

Let me tell you, you can’t do this in a restaurant, or even at KFC.  Ever seen anyone whip out their laptop in a restaurant before? Naaa, it’s not happening.

A Café should have comfy seats too, you know cozy seats that make you think you’re home, yeah, that one.

I’ve only been to two Cafés so far and the seats were okay, but not that one that makes you think of home.

There’s music flowing, soft in the background, not too loud and not too faint. So you get that therapy for free, well not really, since you’re paying for it.

So, if you’re the nerdy type, or the blogger who likes to work on the go, Cafés are meant for you.

Then, there’s the part about good food.

Come on! It’s a coffee house, the coffee must be good.

I mean it’s the signature of a Café.

Honestly I have been to two cafés so far and I didn’t try the coffee. Haha!

But don’t worry I will next time, because I hear it’s really delicious.

For the coffee lovers who can’t work without it, these Cafés serve all the kinds you like, the lattes, cappuccinos, iced coffee, you’ll love it.

Sandwiches are great too if you love sandwiches while you work. I got this one from Vida Café, it was truly amazing as it looks, crunchy, tasty, lush, ok I’m stopping now.

And for breakfast, breakfast at Café Mondo was great. It’s the kind of breakfast mum will make, unless she was pounding fufu at 6am.

How can you have this and not work effectively?

Work and food never did anyone harm.

The icing on the cake is there is WiFi you are allowed to access just because you are a beloved customer.

But you know how GH is, and how our internet can really disgrace you, but as long as it works, it’s yours to use.

Service is good, you know, if you’re looking for pretty waitresses, you should go to Cafés. Haha!

Have You Tried Ghanaian Street Food? 

There are some foods you have to just get on the street, when you’re on the go and there’s no way you can cook. 

Today, I couldn’t resist this beauty, roasted plaintain with groundnuts. A friend told me he didn’t know you’re supposed to eat it with groundnuts. Well now you know, you can’t separate these two, it’s a taboo. Haha! 

Some people like it a little unripe but not me, I like mine very ripe, soft, and hot. 

Mmmm, you will enjoy this as it melts in your mouth and you taste that sweetness. 

Are you in Ghana? you should this, and chat with the women who sell them, they are friendly.

What truly bonds us is not Social Media. . . 

Friends are best made outside your phone.

You can call me old school because I still believe in phone calls, letters, talking for long, and I hate typing in short hand. I mean what is short hand? 
But no, I’m not just old fashioned, I’m a human being who still appreciates the things that truly bond us. 

Social Media brought us closer and yet we are still very far. 

Have you ever had a conversation with someone on whatsapp and you ended up fighting because this person said something that upset you, and they didn’t even know it?

Yeah, it’s because you can’t see the person’s facial expressions, you can’t hear the tone in which the person said it. And don’t tell me emojis are there to show that. 

Guys, do take time out, from your phones and laptops and tweets and have a real conversation with your friends, your family and co workers. Calls are not that expensive these days or any other day for that matter or better still, just meet up. 

Like I did last night. You see, I was tired of talking to people on a page, I wanted to know the people behind their phones. 

So I went out with some friends, and indeed, what bonded us was great food, refreshing talk, music, and oh yeah, no phones. We put our phones away till it was time to take pictures. We did go back to it from time to time which proves how much our phones control us but we won in the end. 

And we didn’t run out of what to say, we didn’t run out of laughter or teasing, we didn’t run out of food too, thank God.

It’s something I am so passionate about, I don’t want my memories with friends and family to only be on whatsapp group pages, or Twitter or Facebook, let’s go out, let’s laugh truly and not just write ‘lol’ with that blasted emoji when truly we are not laughing. 

Let’s run, let’s smile, let’s eat, let’s share, let’s look up from our phones and live.
